Bakewell Cake

The blackberries are starting on our allotment - especially fat and juicy this year because of the hot sun in June followed by all that rain in July. Blueberries have become new favourites everywhere but blackberries are free, local, organic and packed with vitamin C, so just as healthy as those (usually imported) fashionable ones. They are delicious eaten raw if you choose the most swollen ones; they freeze beautifully for blackberry and apple crumbles in the winter; and they can be used in this quick cake. It keeps for a few days improving all the time. Bakewell Cake 5 oz SR Flour 5oz ground almonds 5oz butter 5oz castor sugar 2 eggs If the butter is soft, mix all together, in the processor for speed and preference. Add a spot of hot water or milk if it seems too stiff. Put half into an 8''/20cm loose bottomed tin which you have greased and best of all, lined. Carrot and Butterbean Soup

The recipe for this is in February's Sainsbury magazine. Carrots are often too bland and sweet for a successful soup - coriander is the classic spice to lift them and my mother adds orange juice and rind to hers. But even so I never think it is the best. Parsnips with a little spice, perhaps curry powder, give you body and flavour, mixed veg, that is equal quantities of swede, carrot and parsnip, are delicious but carrot in my book not so. But add a tin of butterbeans and the result is great; the beans give it body and savoury richness . So: 1 onion, sweated gently in oil and then 1/2 tsp cumin, coriander and pinch of chill powder added; 2 pints hot stock; 1 tin butter beans, juice and all, plus a generous 1 1/2 lbs carrots, simmered 20 minutes plus; liquidise and enjoy - with a spoonful of yoghurt per bowl stirred in, or croutons or crispy fried onions with some spice added - or just chunks of good bread..

Savoury Cake?

A wierd idea, a savoury cake. But also surprisingly good, easy, tasty, useful for all kinds of meals and what's more, French! I mapied this recipe from a kind stranger after I had tested all three of her versions, left out for event visitors to snack on. I could not wait to try it. And if you look up 'Les Cakes de Sophie', and if your French is up to simple scratch, you could read lots of versions. Savoury Cake 3 eggs 100ml sunflower oil 150 ml milk 150 grams SR flour Beat the eggs, add the flour and slowly the milk and oil, beating well until you have a batter like mixture. Season with your additions in mind, but at least some salt and pepper Now add: 1) Mushrooms, chopped and fried, plus olives chopped - as many of each as you think you'd like, perhaps a couple of ounces of mushrooms and a good handful of olives any colour. 2) Chorizo chopped and fried with red peppers, softened or out of a jar.
