These are easy and you can say they are healthy with lots of oats and good oil - never mind the brown sugar and the choc chips.. One does seem to be enough.
Chocolate Oaty Biscuits - makes at least 16 or more if you make them smaller
- 140g oats - any kind, ordinary porridge ones are fine
- 100g wholemeal flour - I use strong bread flour as that is what I keep in
- 100g plain flour
- 110g brown sugar any kind
- 1/2 tsp baking powder
- 150ml light olive oil - or rapeseed
- 50-80 dark cho chips
- 1/2 tsp fine salt
Mix all these together. If it seems to need it, add a little cold water to make a stiffish mixture. Lightly flour a surface, pat out or roll the dough to 5mm thickness - I don't measure, you know how thick you like your biscuits. If very thick, you could call them cookies... Use a glass or metal ring to cut them out. Lay carefully on trays you have lined with greaseproof paper.
Bake about 15 minutes until slightly changing colour. They will be fragile but will crisp up as they cool on a rack. Store in a tin and they will last if you can.
