The measurements for this use a 'cup'. I have American type
measuring cups but any cup will do. I don't think it has to be too exact. It
takes a few minutes to make and then a couple of hours to set.
The recipe calls these a perfect 'back to school snack' which works for work too - and for some of us, just compensation for the summer ending.
1/4 cup coconut oil or butter
1/4 cup honey
1/4 teaspoon salt
Flavourings of choice - I used 1 tsp vanilla extract, 1/2
tsp mixed spice, 1/4 tsp cinnamon.
1 cup porridge oats - not the quick kind
1 cup nuts and seeds - mix up what you have, say sunflower
seeds, pumpkin seeds, flaked almonds, chopped walnuts
1 cup chopped dried fruit - raisins, apricots - what you
have and like. Chop them quite finely.
Optional extra - dark chocolate of choice - about half a
bar
- Melt coconut oil, honey, salt and flavourings together.
- When they are foamy, add the oats, stir to mix, add the nuts etc.
- Stir in the fruit
- Cook for a couple of minutes on a low heat to soften the mixture - it is hard to get it to stick together and this helps.
- Line a small tin or dish ( 6'' by 8'') with grease proof or cling film, leaving lots to hang over the edges.
- Press the mixture into the tin, using a wooden spoon to squash it evenly down.
- Fold the paper or film over and use this to press again. If you can, put a couple of tins on it. Leave in the fridge til cool.
- Melt and spread the chocolate on and then leave to chill for at least 2 hours.
- Cut into lots of small bars - store in a tin. They are rich and full of goodness.
