Baked Peaches

It is a happy sign of summer, whatever the weather, when the peaches and nectarines arrive but so often they are a disappointment - slow to ripen and quick to go bad in the bowl. So baking them for a simple hot dessert is not only delicious but useful. Both kinds of fruit do have to be ripe enough for you to split and remove the stone but in desperation you can slice them.

Halves of peaches or nectarines, cut side up in a shallow dish. Mix a little sugar with cinnamon and sprinkle into the cavities. Squeeze into the base of the dish an orange or two - or use juice from a carton. You don't need much, just enough to provide a little liquid in the base.

Bake for at least 30 minutes in a moderate oven, say No 4/150 but they may need 45 mins or even an hour if you reduce the heat. This is a very flexible way to eat them. If they are really unripe they will need more sugar and take longer. 

You can eat them hot, warm or cold - a taste of summer.
