Simply Beans

Now that broad beans are at their best, and better still if you can pick them yourself or get them from a friend or local grower, it is time to cook them for a simple but delicious supper - just three ingredients for this annual treat.

Soften a thinly sliced onion in olive oil. Add chopped bacon, cook together. Add cooked broad beans and let them sit in the pan for several minutes on a very low heat.

Serve with some new potatoes and a sense of summer's bounty.

You don't need to skin the beans if they are fresh. Just cook them gently and enjoy the whole thing.The quantities of onion and bacon depend on what you have and especially how many beans there are. You want more beans than anything else.
