Store Cupboard Tuna Sauce

Tasty, quick and all with what we usually have in the cupboard - tuna pasta is a favourite of ours and just the thing for a busy day when we are eating at different times .This good tempered sauce can be heated up whenever you need it.

Tuna Pasta for 2 generous portions.

To feed 4, just add more tomatoes, the whole tin of anchovies and a few more capers

1 onion chopped finely
1 fat clove of garlic chopped finely or crushed
1 tin or packet of chopped tomatoes
A squeeze of tomato puree
1 tin of good quality tuna drained
Half a tin of anchovies chopped
A sprinkle of capers
A bay leaf and a sprinkle of dried herbs, oregano or mixed

  1. Fry the onion gently in a little olive oil till softened
  2. Add the garlic and anchovies - cook a minute or so
  3. Add the tomato puree, then the chopped tomatoes and herbs
  4. Cook on a low heat for 10 - 20 minutes till you have a thick soft sauce.
  5. Stir in your tuna and heat through. Taste for seasoning - it might need pepper but will be salty enough from the fish and capers.

Eat with lots of pasta, grated cheese if you like - I don't with this - and a salad
