Stuffed Eggs

Something for lunch or a light supper when there is not much in the fridge and the weather is so nice you don't want to cook - this easy way of presenting eggs fits that bill.

Boil your eggs till hard - 8/9 mins or so from cold.
Put immediately into cold water for a few minutes.
Shell, halve and scoop the yolks into a bowl.
Add S and P, a dollop of mayonnaise, plus a knife tip of English mustard.
Mash it all till smooth, adding more mayonnaise as you need to make it a soft mixture.
Taste and add more seasoning as you wish.
Put the white halves on a plate of lettuce. Fill each with yolk mixture, using a fork to give a slightly ridged appearance- which doesn't matter!

Alternatively use a couple of cloves of garlic minced or finely crushed, mayonnaise and no mustard - then you have garlic eggs which can be a starter, very seventies and good.
