Cheesy Leeks

Lovely new season leeks are in the shops ow and ready on our allotment too. This comfort food dish is one of our favourite ways to enjoy them, with mashed potatoes and extra green veg (not really necessary with the leeks but this is about having a big plateful).

For two but easily increased

Cheesy Leeks

4 leeks - choose slender ones and if they are very long, cut them into two lengths
4 slices of ham - if you want it to be vegetarian you can leave the ham out
Grated cheese preferably a strong one eg mature cheddar
3/4pint milk plus flour and butter for sauce


  1. Simmer the cleaned leeks in lightly salted water till you can pierce them with a skewer or fork. Drain very well.
  2. Make a  cheese sauce with a 1oz butter melted, a tablespoon of flour added and then the milk whisked in.  Let it simmer, season well and then add enough cheese to make it tasty and a good thick consistency.
  3. Wrap a slice of ham around each leek and place in a shallow dish.
  4. Pour over the sauce.
  5. Top with more grated cheese and fresh breadcrumbs mixed. If you don't have the crumbs, no matter.
  6. Bake 20 to 30 mins in a hot oven, no 6/200 till bubbling.
