Beans Means....

2 onions, 2 peppers, red and yellow, 4 or 5  carrots , 2 courgettes, 2 garlic cloves,  2 tins beans, red kidney and butter, 1 tin or packet of chopped tomatoes, a bay leaf,...

A delicious bean stew emerges after 30 minutes simmering. You need to chop the vegetables, of course, use a little oil to soften the onions first before stirring in the rest of the veg, then add some smoked paprika for kick, say 1 teaspoonful, then a capful or two of balsamic vinegar for depth. Add the liquid from the butter beans if it is a good make, if not use vegetable stock to barely cover the mixture. You just need enough to cook the carrots.


Easy, cheap if you usually keep the tins in the cupboard and a really colourful autumn meal for two or three.


Just add yoghurt on top if you like. Or serve with bread when it will serve four.
