Imagine fine strips of tender beef, marinated in very finely chopped red onion, lots of pulped garlic, more pulped lemon grass, seasoning, a little oil, chilli sauce and chopped fresh chillis - then imagine a free standing heater with a metal dish balanced on top. Let the dish heat and then pour in a layer of coconut water. Let that heat through and now let the beef strips cook some at a time till they change colour but no longer. Put onto a dish while you cook another lot. Eat with chopsticks and fried rice paper dipped in fish sauce while looking out over the green waters of the lake.
