Cheap and cheerful in the cold

So there is very little in the fridge or cupboard as we have been away and it is so icy outside. But two flat mushrooms, three button ones, two tomatoes, potatoes and mousetrap cheese are enough, it turns out, to have Cheesy Jackets with a twist and no need to go shopping or feel deprived.

  1. Bake large potatoes for an hour or so in a hot oven till the skins are crisp and the insides soft.
  2. Meanwhile fry the chopped mushrooms in butter. Season them
  3. Slice in half and spoon out the insides into a bowl. put the empty skins on a flat baking tray and keep the oven on.
  4. Mash the potato, add a little butter or milk or that bit of left over creme fraiche. Then mix in grated cheese,as much as you like, the cooked mushrooms with their juices and some salt and pepper.
  5. Spoon this mixture lavishly into the waiting skins, put a slice of tomato on each and top with any extra cheese.
  6. Bake for another 20 minutes or so till looking very good indeed, golden and steaming. Eat with baked beans for additional comfort (or salad or frozen peas if the store cupboard/fridge allows).


We had brown sauce on the side, so unsophisticated but good, and there were no complaints at all!
