Pink Farfalle


Lovely Italian visitors laid on a wine tasting party last night, with a feast of Italian food alongside. They perhaps hadn't realised that a group of ageing locals here would concentrate on swigging the wine, and ignore the quiz they had prepared, and be too far gone by mid evening to take in much of the educational input . We did have a lot of fun. We would have liked recipe sheets though.



I did ask for the method to make the amazing pink farfalle and here it is. Haven't cooked it yet but have eaten it and it is simple, delicious,and vegetarian.


Pink Farfalle

One cooked beetroot
Half an onion softened in oil
Blend these with some single cream and good squeeze of lemon juice to a thickish paste
Put into a shallow pan, add half a glass of white wine, heat gently, season, add grated Parmesan and the the cooked pasta -there should be just enough to coat it smoothly and no more.
