Flapjack Flapjack




The thing about flapjacks is you can convince yourself they are(quite) good for you because of the oats, they take 5 minutes to make, they keep and they are endlessly versatile. These in the tin are the standard 6/4/4 recipe - Flapjacks- with a handful of dried cranberries sprinkled in, plus a larger handful of mixed seeds, for extra goodness, and a few crumbled walnuts. I really like a good 2 handfuls of salted peanuts as one alternative - unlikely but good.

I also have two recipes for fancier flapjacks, both of which are popular:

Special Flapjacks - a very rich and sticky mixture but you can fill it with good for you stuff as well so it doesn't feel too bad

9oz butter - a whole packet...
15 tbs golden syrup - a lot! If you worry about this, make some of this honey. I find 10 generous spoonfuls is really enough but the actual recipe says - 15..
4/5oz brown sugar
9oz oats
4oz dried cranberries and blueberries mixed
2oz pumpkin seeds
4 tbs dessicated coconut
6 tbs sultanas

NB You can vary the fruit and seeds but keep the overall quantities the same. I don't put coconut in but do add nuts and other dried fruit.  Dried apricots are nice with or without some lemon or orange zest added.

Melt the butter and mix all the ingredients together; put into a shallow swiss roll tin; bake at No 3/140 for 20 minutes or until golden. Makes 24 squares.

Energy Bars - a soft, rich type of flapjack which is very popular

1 tbs dark brown sugar
250 ml condensed milk - a standard tin
6oz dried apricots chopped
5oz oats
2oz pumpkin seeds
2oz whole almonds (skinned) chopped
2 oz rice krispies - if like me, you never have these in, leave this bit out and increase the oats - if you have them, they just make the mixture lighter

Stir the sugar into the condensed milk. Mix all the rest and then the add the milk. Press into a swiss roll tin, making it reasonably even with your hands. Bake at No 3/4 / 150 for at least 20 minutes, checking carefully that it doesn't overbrown. Cool in tin. Makes 16 bars or more squares for a lunchtime, or any time, energy boost.
