Fajitas

This is a recipe for another fast food favourite, once exotic and now commonplace, that is easy and much more delicious homemade. You don't need to buy any packets, except for the tortillas. You need chicken breasts, so it could be a use for that whole one you jointed, but this recipe is in quantities for 6 people, so you actually need 4 breasts ( 2 chickens?). It is also low fat, if that matters, and you can make it into a feast that includes vegetarians by adding in a spicy bean stew which everyone else will then eat too.

Fajitas

4 chicken breasts

Marinade:
Juice and zest of 2 limes
2 tspns honey
2 cloves garlic
1 red chilli chopped
2 tsbs fresh coriander
S&P

2 limes
4 red and yellow peppers
1 bunch spring onions
Fresh coriander
Honey
1 red chilli
Wraps/tortillas - 2 per person
Sour cream
Tomatoes

  1. Cut chicken into 1/2 in strips and marinate in the mixture for 30 mins - don't put it in the fridge.
  2. Make a salsa with finely chopped spring onions, 1 chilli, 2 tsps honey, S&P, 2 tsbs coriander, juice and zest of 2 limes plus 1 tsb cold water.
  3. Skin peppers by roasting or grilling them and then cut into fine strips.
  4. Warm wraps 15 mins
  5. Put sour cream and skinned,chopped tomatoes into separate bowls.
  6. If you want guacomole instead, mix the tomatoes and cream with a mashed ripe avocado at the last minute; taste and add chilli to your liking, either a fresh one chopped or some chilli sauce.
  7. Just before serving, tip chicken and marinade into a pan and fry 4-5 mins until just colouring.

Bean Stew

Cook red peppers, onions, and garlic with some chilli powder until soft; add tinned tomatoes and your chosen bean, kidney beans to go with fajitas, and then cook into a thick and tasty stew. You can take out half of the beans, mash and return, then add some grated cheese before serving.
