Brownies (for Hannah)

There are lots of richer versions of these. Jamie's is especially good with lots of good quality chocolate in the mixture. But this recipe is a simple, fail safe and always appreciated one which you can make from the store cupboard and so is reasonably cheap- as long as you have block butter in the fridge....

Brownies (for Hannah)

8 oz butter
7 oz brown sugar
1 oz cocoa
3oz self raising flour
1/2 teaspoon baking powder
2 eggs

  1. Add sugar and cocoa to melted butter; let the sugar melt
  2. Beat in eggs once it has cooled slightly
  3. Then add flour plus baking powder and beat quite vigorously

Now add a whole or a half packet of plain chocolate chips

Alternatively add: some walnuts are good

Or a punnet (about) of raspberries

Or a little of both choc chips and nuts if you can

Bake in a shallow rectangular tin, well greased, at No 3/140 C 20-25 mins.

Take out while still slightly soft looking but firm around the edges.

Mark out with knife while warm but leave till cold to separate and put in tin - or distribute while warm.
