Plum Cake

The first Victoria plums, early this year because of the sunshine, deserve a cake. They will be delicious in a plum version of Apple Cake, but this simple upside down version works well too.


8ins/20cm sandwich tin

Oven at No5/175

Butter the tin, base and sides quite generously  and then sprinkle it all round with sugar and cinnamon - about 2 tablespoons of sugar mixed first with cinnamon. Halve enough plums to fill the base of the tin.

100g butter out of the fridge

10og sugar

100g plain flour plus 1 teaspoon baking powder

2 eggs

Beat the softened butter with the sugar, in a food processor, with a hand whisk or a wooden spoon. Beat in the eggs and flour - it can all go in at once. If the mixture seems at all stiff, add a teaspoon or so of milk.

Spoon the mixture over the plums, not worrying too much as it will spread in the oven.

Bake 25-30 minutes till risen and golden and your tester comes out dry. Put on a rack to cool and run a knife around the edge to make sure it will come away.  Turn it out onto a plate and eat warm or cold.
