Quick prawn noodles

Frozen prawns in a bag are the easiest way for us to source my favourites as we don't have a fishmonger and now even the supermarket fish counters are closed.. Prawns and Pasta are a simple regular but this recipe is a fresh tasting, Vietnamese-like stir fry. I have adapted a Nigel Slater idea of a marinade and added in a supermarket oriental stir fry mix. Quick and easy... Delicious.

Prawn Stir Fry

For 2 people


Noodles, a type you like
Bag of frozen raw prawns, medium size is best, defrosted
Chopped vegetables eg sliced peppers, spring onions, carrot matchsticks etc
Marinade:
2 tablespoons fish sauce
2 tablespoons mirin
1 tablespoon rice vinegar
100ml lime juice, about 2 limes f they are small 
1 red chilli sliced

Fresh mint and coriander to add at the end

Mix the marinade and leave the prawns in it for 30 minutes or so.
Cook your stir fry veg in hot oil
Take out of the pan. Take the prawns out of the marinade and fry gently just til they turn pink, a matter of two minutes as you don't want to overcook them. Take them out and add the marinade liquid to the pan.
Cook the noodles.
Add the noodles into the marinade, mix, heat, add the vegetables and lastly the prawns. Sprinkle lavishly with the herbs.
