Spring Rolls Again

Crunchy fried rice paper, strips of seasoned pork mixed with sticky rice, platefuls of salad and herbs, chilli pickled carrot and green papaya, two sorts of sauce plus extra ''sour pork'' in leaves, all rolled up as you like in rice paper wrappers. As the quantity of green banana slices and green mango shreds on the salad plate goes down, quickly more are brought. More pork, more wrappers, more sauce - the quantities are replenished as you go. It is food so fresh, so sharp tasting with so many different textures in your mouth that it is easy to keep eating and they will just keep giving you more. This is a favourite place to eat in Tuy Hoa and it is all in for 75p per person.

A source of rice paper wrappers should be easy to find as there are Chinese supermarkets fairly nearby at home. This is a meal I would love to reproduce for friends. Maybe a fully authentic version is out of reach, green papayas are not abundant in our northern town, but a good approximation would still be delicious or as the Vietnamese might say ' so delicious, yummy yummy!!'
