As the recession continues, it seems that the fashion for visual food, and posh recipes using at least 3 rare and expensive types of sauce or seasoning, might have diminished. The Guardian is even doing 'dinner for under a fiver' from the big chefs all this week. It is as if the habits of the past - using up what is there, being inventive with the same old staples, eating simply what is in season - have to be re learnt.
Well, we enjoyed Delia's potato and cheese souffle last night. I will have to write it up here so that the cutting of newspaper doesn't get lost, as so often happens. But Jamie's tomato pasta today- not very original and he still wants you to buy basil - well, I agree, it is now almost indispensable - but also pancetta and parmesan in a block. My children will assume these are staples and perhaps they have become so. If you have got these ingredients already, as so many of us will have, his dinner will be under a fiver - but not if you have to go out and get them.
It is a different kind of parsimony and care than other generations have known. You still have to go to the supermarket and stroll down the aisles in search of imported and really quite expensive things.
Anyway, I am going to try his way of doing a tomato sauce and the salad is in the fridge!
